By land, sea, and air! Any place can be the source of the flavors you’ll taste with the empanadas we make in our workshop.
The assortment of flavors we create will allow you to experience explosions of flavor on your palate, in a varied selection of options, based on the ingredients we use: meats, fish, seafood, or vegetables.
Flavors from our land, for example from the Galician flat onion that we peel and caramelize daily and that provides an unmistakable first touch of texture and flavor in the mouth. In the caramelization we also use another local product, in this case from Extremadura, Pimentón de la Vera (smoked paprika).
The strong flour also comes from Iberian lands, selected and non-additive, which we use to make the flaky bread dough characteristic of our empanadas and which we seal by hand at the moment of preparation.
Our creations have a special hallmark, their flavor, the result of combining the best raw materials from the land together with seafood and fish from the Galician coasts and rías, such as cockles from the Ría de Muros Noia or Xouba, which we regularly source from the A Coruña fish market.
In addition to the raw materials used, the meticulous and traditional preparation process also explains the sensory experience of a unique empanada. A manual and natural preparation process.
On many occasions, as our diners’ experience tells us, there is a phase prior to that explosion of flavor in the mouth, which comes through the air and is associated with the aroma released by the empanada at the moment of baking. This aroma remains and continues to be released several hours after baking, as can be perceived when serving the product or plating it at the diner’s table… the explosion of flavor in the mouth is about to occur…
To fully enjoy these flavor explosions, we suggest you use all your senses: smell and sight initially, touch and of course, taste. Finally, listen to the characteristic crunch of the flaky dough.
